A invenção refere-se a um método para a produção de ácidos graxos multiplamente insaturados em um organismo, para dentro do qual ácidos nucleicos têm sido introduzidos, que codificam polipeptídeos com atividade de <30>-5 elongase. As citadas seqüências de ácido graxo, opcionalmente com outras seqüências de ácido nucleico, codificadoras de polipeptídeos para a biossíntese de ácidos graxos e metabolismo de lipídeo, são vantajosamente expressadas no organismo. As seqüências de ácido nucleico codificadoras de uma atividade de <30>-6 dessaturase, <30>-5 dessaturase, <30>-4 dessaturase e/ou <30>-6 elongase são particularmente vantajosas e, vantajosamente, as citadas saturases e elongases são derivadas de Thalassiosira, Euglena ou Ostreococcus. A invenção refere-se adicionalmente a um método para a produção de óleos e/ou triacilglicerídeos com um conteúdo aumentado de ácidos graxos multiplamente insaturados, de cadeia longa. Uma modalidade específica da invenção é um método para a produção de ácidos graxos insaturados <sym>-3 e um método para a produção de triglicerídeos com um conteúdo aumentado de ácidos graxos insaturados, em particular de ácidos graxos <30>-3 com mais do que três ligações duplas. Também é descrita a produção de um organismo transgênico, preferivelmente uma planta transgênica, ou um microorganismo transgênico com conteúdo aumentado de ácidos graxos, óleos ou lipídeos <sym>-3 com ligações duplas <sym>-3 como um resultado da expressão das elongases e dessaturases empregadas no método acima, preferivelmente em combinação com <sym>-3 dessaturases, por exemplo uma <sym>-3 dessaturase de fungos da família Pythiaceae tal como do gênero Phytophtora, por exemplo, do gênero e da espécie Phytophtora infestans, ou uma <sym>-3 dessaturase de algas tais como da família Prasinophyceae, por exemplo, do gênero Ostreococcus e, particularmente, do gênero e da espécie Ostreococcus tauri ou diatomácea tal como do gênero Thalassiosira e, particularmente, do gênero e da espécie Thalassiosira pseudonana. A invenção também se refere às seqüências de ácido nucleico, às construções de ácido nucleico, aos vetores e aos organismos contendo as seqüências de ácido nucleico, as construções de ácido nucleico e/ou os vetores. Uma outra parte da invenção refere-se aos óleos, lipídeos e/ou ácidos graxos produzidos de acordo com o método acima e ao seu uso e, em adição, aos ácidos graxos insaturados e triglicerídeos com um conteúdo aumentado de ácidos graxos insaturados e ao seu uso.
