Abstract
La presente invención se refiere a métodos para la producción de un alimento o una bebida a base de malta, adecuada para el consumo por un sujeto con enfermedad celiaca. En particular la presente invención se refiere a métodos para la producción de un alimento o una bebida a base de malta con bajos niveles de hordeínas. También se proporcionan plantas de cebada que producen el grano que se puede usar en los métodos de la invención.
