本发明的富硒营养代餐粉的制备方法:
(1)采购原料:海藻糖、大豆分离蛋白粉、卵磷脂粉、葡萄籽粉、海带、杏仁(去核)、核桃(去壳及夹衣)、黑芝麻、花生(去壳)、葵花籽(去壳)、酸枣仁(去核)、胡萝卜、芹菜(去根须)、山药(去皮)、五味子、富硒黑小麦、小米、玉米、枸杞、扁豆、番茄、菊花、南瓜(去皮、去核)、大枣(去核)、决明子和青豆,并筛选、清洗;
(2)将清洗后的海带、杏仁、核桃、黑芝麻、花生、葵花籽、酸枣仁、胡萝卜、芹菜、山药、五味子、富硒黑小麦、小米、玉米、枸杞、扁豆、番茄、菊花、南瓜、大枣、决明子和青豆以120-150度低温烘焙干燥,再按80-100目细度粉碎备用;
(3)将富硒黑小麦粉、小米粉、玉米粉和海藻糖按上述配比混合搅拌均匀备用;
(4)将剩余的原料粉依次加入步骤(3)得到的混合料中混合搅拌均匀即可;
(5)按照规定重量进行分袋包装,打印上生产日期装箱,检验合格后入库。

本发明的富硒营养代餐粉中加入海藻糖,海藻糖属于安全无毒的物质,具有可以抑制淀粉老化、抑制蛋白质变性、抑制脂肪变质、提高冷冻耐性、防止吸收水分、保持水分、改善甜度和口感、不褐变以及平缓的血糖和胰岛素反应的特点,其与富硒黑小麦粉、小米粉和玉米粉中水分紧密结合,从而防止淀粉老化,提高保鲜效果,起到防腐剂的作用。在糖质中,海藻糖相对其他糖类具有高度结合水分的能力。同时,还有改善肠道对糖的吸收等功能。
本发明的富硒营养代餐粉中加入富硒黑小麦粉,其中含有的硒元素具有抗癌、抗氧化、增强人体免疫力、抗有害金属、调节维生素A、C、E、K的吸收与利用、调节蛋白质的合成功能以及增强生殖功能的作用,同时硒元素是肌肉功能的重要成分,从而提高代餐粉的营养价值。
本发明以120-150度低温烘焙干燥、清洗后的坚果、蔬菜、谷物、中药材等原料。低温烘焙是一种烘干方式,是用交流接触器、热电偶、温控仪表、电热元件等相互组成,当温度达到一定的时候,热电偶检测温度传输到温控仪表,温控仪表反馈给交流接触器,通知交流接触器断电,即不再进行加热,反之,进行加热。美味的烘焙食谱中,不管是主菜或是甜点,通常大多是高温烘培,180度到200多度的高温很常见;但是高温既会破坏食物的营养,又会产生对人体有害的物质,对身体实在是坏处多多。而低温烘培的好处很多,也很健康,特别是针对淀粉类食物。健康的低温烘培是先预热烤箱,以120-150度的低温来烘烤食物,运用延长时间的方式来让食物熟透。一旦超过上述温度范围,淀粉类食物就容易产生丙烯酰胺,160度以上甚至会大量出现,其中又以炸薯条产生的量最大,堪称头号杀手;原因在于马铃薯的天门冬胺酸含量高,经高温烹调后会产生大量丙烯酰胺。至于一般速食店常见的炸鸡,虽没有大量丙烯酰胺的问题,但油炸所产生的自由基与反式脂肪酸仍不可忽视。

本发明的富硒营养代餐粉中加入坚果,坚果中分别含有蛋白质36.0%、脂肪58.8%、碳水化合物72.6%,含有维生素(维生素B、维生素E等)、微量元素(磷、钙、锌、铁)、膳食纤维等,还含有单不饱和脂肪酸、多不饱和脂肪酸,包括亚麻酸、亚油酸等人体的必需脂肪酸,对人体生长发育、增强体质、预防疾病有极好的功效,同时其作为代餐粉配方中主要的碳水化合物来源,使服用者产生饱腹感。

本发明的富硒营养代餐粉中加入谷物,谷物中含碳水化合物不但量多(约70-80%),而且大部分是淀粉,且利用率在90%以上,是人体热能堆经济的来源;谷物是B族维生素的重要来源,其中维生素B1、B2和尼克酸较多,小米、玉米中含有胡萝卜素;谷物主要给人体提供50%-80%的热能、40%-70%的蛋白质、60%以上的维生素B1。
本发明的富硒营养代餐粉中加入中药材,酸枣仁具有养肝,宁心,安神,敛汗的药理功效;五味子具有抗肝损伤、安定、强心、增强免疫、抗菌的药理功效;枸杞具有滋补肝肾、益精明目的药理功效;菊花具有清肝明目、平抑肝阳的药理功效;决明子具有清肝明目、润肠通便的药理功效,运用其润肠通便功效,清除服用者肠道中过量的油脂,对控制血压有一定的辅助作用。
本发明的富硒营养代餐粉中加入大豆分离蛋白粉,大豆分离蛋白是以低温脱溶大豆粕为原料生产的一种全价蛋白类食品添加剂;大豆分离蛋白中蛋白质含量在90%以上,氨基酸种类有近20种,并含有人体必需氨基酸;其营养丰富,不含胆固醇,是植物蛋白中为数不多的可替代动物蛋白的品种之一。大豆分离蛋白的功能特性:乳化性,大豆分离蛋白是表面活性剂,它既能降低水和油的表面张力,又能降低水和空气的表面张力,易于形成稳定的乳状液;在烤制食品、冷冻食品及汤类食品的制作中,加入大豆分离蛋白作乳化剂可使制品状态稳定;水合性,大豆分离蛋白沿着它的肽链骨架,含有很多极性基,因此具有吸水性、保水性和膨胀性;大豆分离蛋白的吸水力比浓缩蛋白要强许多,而且几乎不受温度的影响;大豆分离蛋白在加工时还有保持水份的能力,最高水分保持能力为14g水/g蛋白质;吸油性,大豆分离蛋白加入肉制品中,能形成乳状液和凝胶基质,防止脂肪向表面移动,因而起着促进脂肪吸收或脂肪结合的作用,可以减少肉制品加工过程中脂肪和汁液的损失,有助于维持外形的稳定;大豆分离蛋白的吸油率为154%;凝胶性,它使大豆分离蛋白具有较高的粘度、可塑性和弹性,既可做水的载体,也可做风味剂、糖及其它配合物的载体,这对食品加工极为有利;发泡性,大豆蛋白中,大豆分离蛋白的发泡性能最好,利用其发泡性,可以赋予食品以疏松的结构和良好的口感;结膜性,当肉切碎后,用分离蛋白与鸡蛋蛋白的混合物涂在其纤维表面,形成薄膜,易于干燥,可以防止气味散失,有利于再水化过程,并对再水化产品提供合理的结构。大豆分离蛋白的理化指标:蛋白(干基)%≥90脂肪%≤1;水分%≤6灰分%≤5.5;粗纤维≤1氮溶解指数(NSI)≥85~95;砷mg/kg≤0.5铅mg/kg≤1.0。大豆分离蛋白的应用:肉类制品,在档次较高的肉制品中加入大豆分离蛋白,不但改善肉制品的质构和增加风味,而且提高了蛋白含量,强化了维生素;由于其功能性较强,用量在2-5%之间就可以起到保水、保脂、防止肉汁离析、提高品质、改善口感的作用;将大豆分离蛋白注射液注入到火腿那样的肉块中,再将肉块进行处理,火腿地率可提高20%;大豆分离蛋白用于炸鱼糕、鱼卷或鱼肉香肠中,可取带20-40%的鱼肉;乳制品,将大豆分离蛋白用于代替奶粉,非奶饮料和各种形式的牛奶产品中;营养全面,不含胆固醇,是替代牛奶的食品;大豆分离蛋白代替脱脂奶粉用于冰淇淋的生产,可以改善冰淇淋乳化性质、推迟乳糖结晶、防止“起砂”的现象;面制品,生产面包时加入不超过5%的大豆分离蛋白,可以增大面包体积、改善表皮色泽、延长货架寿命;加工面条时加入2-3%的大豆分离蛋白,可减少水煮后的断条率、提高面条得率,而且面条色泽好,口感与强力粉面条相似。
本发明的富硒营养代餐粉中加入卵磷脂粉,卵磷脂被誉为与蛋白质、维生素并列的“三大营养素”之一,卵磷脂是构成人体细胞膜,尤其是脑神经细胞膜的重要组成部分,对人体细胞的生长、代谢以及调节心脑器官的生理功能起着重要作用。大豆卵磷脂是以非转基因大豆为原料提炼而成的卵磷脂,被营养领域誉为“生命基础物”。最早是在鸡蛋黄中发现卵磷脂,同时蛋黄中的卵磷脂有效成分也是最优质的,但是目前人们主要是从大豆中提取卵磷脂,其特点是不含胆固醇并含有胆碱、维生素、矿物质、亚麻酸及次亚麻酸等成分。其中胆碱是人体必需的营养物质,这是一种对神经活力有所帮助的化学物质,是脑神经传导、ACETYLCHOLINE、乙酰胆碱以及许多重要的化学讯息的前身,对脑部发育有着很大的帮助作用。卵磷脂在我国也只是少数人享用的贵族食品,而在发达国家,卵磷脂已成为很普及的营养食品了。国外现在连煮饭也用上了卵磷脂;煮出的米饭颗粒饱满、晶莹剔透、香味宜人。大豆卵磷脂的益处:增强肝脏对脂肪、毒素代谢的功能,保护肝脏,是脂肪肝、肝硬化的调养品;使血管中的大块脂肪乳化成小颗粒,顺利通过血管,预防其附在血管壁上,造成动脉粥样硬化;维持脑神经细胞的正常功能,达到预防老年性痴呆症的功效;保护细胞,延缓细胞衰老,增进细胞的活力,增强人体的免疫力和抗病能力。
本发明的富硒营养代餐粉中加入葡萄籽粉,葡萄籽提取物(OPC)是迄今发现的植物来源的最高效的抗氧化剂之一,体内和体外试验表明,葡萄籽提取物的抗氧化效果,是维生素C和维生素E的30-50倍,能有效清除体内多余的自由基,保护人体细胞组织免受自由基的氧化损伤,防治过敏、癌症、衰老等100多种与自由基有关的疾病,还具有加强和保护人体活性组织、稳定细胞膜以及抗酶活性(组胺脱羧酶)等生物特性。此外,OPC很好的生物利用度,易于被人体吸收;其它的抗氧化剂如硒、锗、胡萝卜素、超氧化物岐化酶(SOD)不是效力太弱就是没有体内活性。葡萄籽提取物含丰富生物类黄酮、是强力的精华分子,用于对抗自由基(游离基)与维护微丝血管的健康。自由基是造成老化及诸多疾病的重要原因之一,据估计大约80%-90%的老化性、退化性疾病都与自由基有关,所以,葡萄籽提取物对人体抗氧化,提高免疫力有极佳的效果。葡萄籽提取物的益处:抗自由基,抗氧化清除自由基,阻止自由基对人体细胞的破坏,保护人体器官和组织,防治心脏病、癌症、早衰、糖尿病、动脉硬化等100多种由自由基所引起的疾病。葡萄籽提取物具有非常强的体内活性。实验证明,OPC的抗自由基氧化能力是维生素E的50倍,维生素C的20倍;降低血脂,葡萄籽提取物富含100多种有效物质,其中不饱和脂肪酸--亚油酸(是一种人体必需但不能合成的)占68-76%居油料作物之首,它由不饱和到饱和状态要消耗20%的胆固醇,能够有效的降低血脂;保护皮肤,人体的青春在很大程度上取决于结构组织的柔韧性,这是身体各部位自然连接网络是否有弹性的保证,而葡萄籽提取物的抗氧化作用能够保护结构组织不被自由基破坏,从而起到延缓衰老的作用;保护大脑,研究显示,葡萄籽提取物可以非常容易地穿越血脑屏障(Blood-brain barrier),它是一种特别有效的抗氧化物质,而且它能够高度集中在大脑和神经组织中,这一特性使它成为大脑最为理想的抗氧化物质;抗过敏,深入细胞从根本上抑制致敏因子“组胺”的释放,提高细胞对过敏源的耐受性;清除致敏自由基,抗炎、抗过敏;稳定皮肤血管组织,缓解荨麻疹、干革热、过敏性鼻炎等各种过敏症状;有效调节机体免疫力,彻底改善过敏体质;保护血管,保护心脑血管,降低胆固醇,防止动脉硬化,预防脑溢血、中风、偏瘫等;维持毛细血管适度的渗透性,增加血管强度,减低毛细血管易脆性;降血脂、降血压,抑制血栓的形成,减少脂肪肝的发生;预防血管壁脆弱引起的浮肿、血丝;减轻水肿及腿部肿胀,减轻淤伤、运动受伤;改善静脉曲张、静脉机能不全、静脉炎,防治毛细血管出血;抗辐射,有效预防和减轻紫外线辐射对皮肤的损伤,抑制自由基引发的脂质过氧化;减少电脑、手机、电视等辐射对皮肤、内脏器官造成的伤害。葡萄籽提取物是天然的阳光遮盖物,能阻挡紫外线侵害皮肤,还能够修复受伤胶原蛋白和弹性纤维。葡萄籽提取物具有收敛作用,收紧皮肤,防止皮肤皱纹的提早出现,长期使用能使皮肤光滑,富有弹性,具有美容养颜的作用;保护组织,保护胃粘膜,防治胃炎、胃溃疡及十二指肠溃疡;保护神经系统,保护大脑神经;营养神经系统;改善睡眠和焦虑情绪,减轻毒品化学品对人体伤害,适合于戒毒;保护眼睛,保护眼睛免受辐射损伤,防治红血丝;增强夜视力、减少视网膜症等。阻止自由基对晶状体蛋白的氧化,预防白内障、视网膜炎。

1.一种富硒营养代餐粉,其特征在于,其包括以下质量百分比的组分:海藻糖21.5-22%、大豆分离蛋白粉3.5-4%、卵磷脂粉1-1.5%、葡萄籽粉0.6-1%、海带粉1-1.5%、杏仁粉0.6-1%、核桃粉3.5-4%、黑芝麻粉3.5-4%、花生粉3.5-4%、葵花籽粉3.5-4%、酸枣仁粉2-2.5%、胡萝卜粉3.5-4%、芹菜粉3.5-4%、山药粉5.6-6%、五味子粉0.1-0.5%、富硒黑小麦粉7-7.5%、小米粉5.6-6%、玉米粉3.5-4%、枸杞粉3.5-4%、扁豆粉3.5-4%、番茄粉3.5-4%、菊花粉2-2.5%、南瓜粉3.5-4%、大枣粉3.5-4%、决明子粉0.1-0.5%和青豆粉3.5-4%,其中,海带粉、杏仁粉、核桃粉、黑芝麻粉、花生粉、葵花籽粉、酸枣仁粉、胡萝卜粉、芹菜粉、山药粉、五味子粉、富硒黑小麦粉、小米粉、玉米粉、枸杞粉、扁豆粉、番茄粉、菊花粉、南瓜粉、大枣粉、决明子粉和青豆粉均是将原料清洗后,以120-150度低温烘焙干燥,再按80-100目细度粉碎而成。
2.根据权利要求1所述的富硒营养代餐粉,其特征在于,其包括以下质量百分比的原料:海藻糖21.9%、大豆分离蛋白粉3.6%、卵磷脂粉1.4%、葡萄籽粉0.7%、海带粉1.4%、杏仁粉0.7%、核桃粉3.6%、黑芝麻粉3.6%、花生粉3.6%、葵花籽粉3.6%、酸枣仁粉2.1%、胡萝卜粉3.6%、芹菜粉3.6%、山药粉5.7%、五味子粉0.4%、富硒黑小麦粉7.1%、小米粉5.7%、玉米粉3.6%、枸杞粉3.6%、扁豆粉3.6%、番茄粉3.6%、菊花粉2.1%、南瓜粉3.6%、大枣粉3.6%、决明子粉0.4%和青豆粉3.6%。
3.根据权利要求1或2所述的富硒营养代餐粉,其特征在于,所述富硒黑小麦粉、小米粉、玉米粉和海藻糖先按上述配比混合搅拌均匀,再将其余组分按上述配比加入混合搅拌均匀即可。
