Make sure installation script is frozen to 1.0.0 including all tag points and checkouts

@doutriaux1 v1.0.0 has been tagged, we'll need to:

• Confirm new build works with GFDL-ESM2G and GFDL-CM4 data
• Validate version info is correctly written (version indicated v1.0.0)
• Check/confirm jsons copied on install
• Add demo files (GFDL/NCAR/ACME) are copied on install
• Fix issues with test subdir (find files and copy them into test subdir)
• Check paths and test basic_test_parameters_file.py
• Update wiki so correct paths are noted (for test case)
• Obtain zenodo DOI
• Finalise README.md with updated DOI
• Fix issues encountered when running test/test_suite.py
• Freeze install_metrics.bash to v1.0.0, UV-CDAT v2.1.0 and CMAKE vx?
• Add portrait plot demo for GFDL test case (need to add *.png files to setup.py)
• Update/document variables in parameter file and finalise "demo" file which is well documented (Fix issue with double period in output (interpolated) filenames #200)
• Move tag point to new commit
• After tag point set, reset all master branch files to point back to "master" checkouts (metrics, UV-CDAT)

These subdirs and hanger-on files should really be purged to keep things clean:

• Cleanup deprecated subdirs/files during install: bin/{.gif, .ttf, .png, .scr, .xmb}, bin/images, bin/tutorials, include, man, share/man

It'll likely need an issue in UVCDAT/UV-CDAT as this is an upstream issue, there is already an issue for this: CDAT/cdat#788

@doutriaux1 once the portrait plot demos for GFDL are in place, the only thing left to do is to better document the "final" parameter file. Once this is done if you can then move the tag point to the new commit, and once that it done then change install_metrics.bash to point back at the master UV-CDAT/Metrics repos and this issue can be closed..
