I love sauce and pasta dishes like this chili mac. It's so easy to throw together and gives you such a tasty dish that really most everyone loves and it's good any time of the year.

Besides a multitude of variations within the recipe itself that you can make by increasing and decreasing the chili seasonings and yes, even the cheese (or even leaving the cheese out), there are other ways to vary it too, just to give it a different flavor. Taco seasoned comes to mind as does a more mildly seasoned ground beef "helper" style of pasta and everything in between.

Slow Cooker Pinto Beans (Frijoles De La Olla)

Pinto beans prepped with a preboil and then slow cooked with onion, bacon and simple seasonings. Serve topped with onions, tomato relish, or pico de gallo with cilantro, if desired, and cornbread or warmed tortillas on the side. A perfect fit for refried beans too!

Of course, beans have always been popular in the South and three beans reign supreme in the Deep South - red kidney beans used for our Monday red beans and rice, white beans generally prepared Cajun style with andouille sausage and more widely across the South in general, pinto beans, prepared Southern-Style.

In the Deep South we make our red beans and rice with red kidney beans, not the smaller more oval shaped red beans that are more popular in Texas, and yes, there is a difference!

For red beans, though I do love them long stewed and cooked on the stovetop the best, I have taken to using the Instant Pot the past few years, just because I'm such a poor advance "planner." For pintos, I have tended to always do those stovetop.

Today, I'm trying pintos in the slow cooker, but with some stovetop adjustments. I know, I know... yeah, you can dump everything in the slow cooker all at once and call it a day, literally, because it is probably going to take all day doing that.

Once upon a time, I didn't think I needed an air fryer. Until I got one.

And, I didn't think I wanted a pressure cooker either.

Like many of you, I had witnessed a disaster with one of those old-school, scary stovetop pressure cookers, when our dinner ended up on the ceiling instead of in our bellies, and boy was my Mama mad!

Nope. Never had an interest in going there.

So, I wasn't a whole lot interested in these newfangled ones either.

I am an animal lover. Most of y'all who have been hanging with us know that because you've heard me talk about the TNR program I have participated in the past 7 years since moving and discovering a neighborhood filled with strays and discards that needed to all be fixed. 
 
My dog Boo has been with me since he was found as a puppy, left behind in a box, inside a buggy in a Walmart parking lot in 2008. Hurricane Katrina had already changed the course of my life and I was just entertaining the idea of Deep South Dish. Boo and I have literally been together 24/7 ever since, so we became best buds.

We're both aging and it shows, but it's the natural course of life isn't it? You don't think about that much when you're younger.

Any kind of a beans and rice dish is a winner for me.
  • It's hearty and filling.
  • It's high in protein and fiber.
  • It's inexpensive.
  • If you use a brown rice and a turkey smoked sausage, it's pretty good nutrition.
  • And, the most important thing. Done well, with a great blend of herbs, spices and seasonings, they are delicious!

Easy Southern-Style Beans and Greens

Whenever I make a pot of white beans and greens close together, a stew of beans and greens are sure to follow.

I believe that Italians have a similar dish, possibly known by the name of Zuppa Di Scarola E Fagioli from what I found on the net, though I was not able to locate a recipe by that name in my copy of The Silver Spoon. They would likely use cannelloni beans and include escarole as the greens, but in the U.S. south, we all know what greens are king. Collards, turnip and mustard greens rule the south.

Beans and rice are a big deal in the south, always have been really. Back in the day, they were an important part of the dietary needs of the people, because families were large and relatively poor, so any kind of bean was an inexpensive, nutritious and filling dish.

Mostly our beans are slow cooked from dried beans, on the top of the stove, and that's really the way I still love them best to this day. Don't get me wrong. Electronic pressure cookers like the Instant Pot do an excellent job and makes a great pot of beans from dried, but slow-stewed still rules in my book. Fresh frozen sometimes fill in, and though faster, still take a little care to make.

Beans, along with their cousins, Southern peas, are a very common meal in the Deep South. They're filling, easy to stretch and tasty! What more could you want to feed a family?

So, if you've been hanging around this blog for any amount of time, you already know I'm not super big on slow cooker usage. I have some recipes here and there, and I still use one occasionally, mostly to write recipes for the website and for those of you who do use them regularly.

Do I like baked beans the best when they're, well... baked? Yes indeed!

I sure love a good soup and even better when it's one of those quick and easy versions, but one that still tastes great!

Soup is pretty easy to make, no doubt about that, and you don't really even need a recipe.

In fact, some of the best soups come out of refrigerator or freezer leftovers thrown together! Trouble is though, trying to recreate the same flavor the next time if you find you really enjoyed that soup!

One Pot Italian-Style Chicken Stew


This is a good and hearty, one-pot, Italian style stew, though "stew" is really a loose interpretation here. It's hearty, but not thick and rich as we think of stews to be, but rather a bit lighter, making it fully appropriate any time of the year.

I based my recipe on a bit of a combination of MarkCharles Misilli's One Pot Italian Chicken from the cookbook Easy Everyday Favorites and Jacques Pépin's Chicken Bouillabaisse in his cookbook Fast Food My Way {affil links}, since I find them to be strikingly similar.

I love nachos pretty much any way you can fix them. I mean who doesn't like piles of tortilla chips, topped with loads of cheese and all kinds of goodness? It's a great game day or movie night snack too and pretty darn easy to throw together.

This one uses some leftover beef roast that you've reserved from that Sunday dinner, along with some seasoned pinto beans, and then finished with some Pico de Gallo or all those delicious individual garnishes we all love - chopped fresh tomatoes, chopped purple onion, sliced green onion, chopped cilantro, sliced or chopped pickled jalapeno, sour cream, guacamole or chopped avocado.

I have struggled from day one over what to call this casserole.

The recipe I patterned this after was called Chalupa Casserole. Okay. Except "chalupas" apparently is the Spanish word for canoe or small boat, or something to that effect, so an authentic Mexican chalupa is so named because the tortilla dough is formed in the same manner, to make a corn canoe if you will, then stuffed with a variety of fillings.

On the other hand, I have gone to a Mexican restaurant before, ordered a chalupa plate expecting that, and received what really was a tostada to me - a flat, fried tortilla, topped with refried beans and meat and dressed like a taco, with lettuce, onion and tomatoes. Nothing concave or boat shaped about it!

The Monday tradition of red beans lives on here in the Deep South, even if they’re made on Sunday, which, when they're made from dried beans, more often they are!

Because time is precious these days, I have four different ways I make them up here on the blog currently, depending on the time factor I have on my hands.

From a quick skillet version like you get with those convenience boxes (but without the added chemicals and preservatives), to a shortcut version that you'll never believe started with canned beans, plus one for the slow cooker and of course, old school, slow-stewed from dried beans (still my number one favorite)... I've got you covered.

I literally have been trying to get this recipe written and uploaded to the blog for almost two weeks! What can I say... seeing as I'm at the age of being mostly retired now, we techically at least because, trust me, a recipe website is as much work as what I did in my corporate legal career!

Anyway, I don't spend too much of my time being in a hurry to do much of anything anymore.

You may have also noticed that the Deep South summer-like fall heat finally gave way to some much cooler, near winter-like fall temperatures. Though it's sure been nice having some cooler temps the past couple of weeks, along with that comes a certain degree of laziness on my part. Though I do still cook, not a lot of writing happens.

It was just The Cajun and me for the 4th of July this year, so I kept things very simple. Smoked rib chops from Corky's, warmed on the grill, my classic potato salad, no husk microwave corn on the cob and these unbaked baked beans.

I call them that because it's essentially my baked beans recipe, without baking it, and using canned navy beans - sort of a semi-homemade, stovetop pork and beans, that I enjoy serving as a side dish anytime.

You can use this for both butterbeans or baby lima beans, both of which I love.

Southern Style Hissy Fit Warning... I love all kinds of butterbeans - big and small and speckled - and I don't understand for the life of me, why some southerners get all up in a tizzy about what they think a butter bean is, any more than what constitutes a "real" cornbread or whether a hoecake is flour or cornmeal based.

The internet has opened the south to all southerners and revealed that despite what we thought growing up, there is no one south. Truth is, how you cook in the south and what you call things in the south, depends on what part of the south you grew up in and how your mama did it, which is more likely than not to be different from how somebody else's mama did.

I have still been working my way through the freezer - some of our meals were reheated leftovers, others, whatever meat I happened to grab first.

In the past two weeks or so, I've baked a ham that I'd picked up on a holiday sale and froze, which along with some frozen sides, gave us a couple of meals and leftover ham for sandwiches. Pre-seasoned ground beef I'd picked up on sale, cooked and put up, became one of our favorite casseroles - Ground Beef Mac and Cheese.

Okay, okay, I realize it's an "invented" holiday - though not really for the reasons that you probably think. It didn't actually come about because a corporation wanted to sell cards and promote the sale of flowers as rumors would suggest.

Grandparent's Day was initiated at a grassroots level by a West Virginian mother of 15, Marian Lucille Herndon McQuade, who with her husband, Joseph L. McQuade, had 43 grandchildren, 10 great-grandchildren, and one great-great grandchild. Mrs. McQuade wanted Grandparents Day to be a family day, to honor grandparents, and to give them an opportunity to show love for their children's children, providing them with the wisdom and guidance that only older people can offer.
