I ordered oatmeal cookie extract from Rockin Drops a while back, and I've been eager to make "oatmeal" cookies. Good news: these may just be my favorite low carb cookies of all time! The flavor is delicious, and with coconut and sliced almonds, the texture is fairly spot on too.
Ingredients:
3/4 cup almond flour
2 tbsp coconut flour
1/2 cup shredded unsweetened coconut
1/4 cup granulated Swerve
1/4 cup golden Lakanto
1 tsp baking powder
1 tsp baking soda
1/4 tsp cream of tartar
1 tsp cinnamon
1/4 cup slivered almonds, chopped
1 large egg
1 stick salted butter, melted
1 tsp vanilla extract
12 drops Oatmeal Cookie extract
Instructions:
1) Pre-heat oven to 350 degrees.
2) Mix together all dry ingredients (almond flour, coconut flour, unsweetened coconut, Swerve, golden Lakanto, baking powder, baking soda, cream of tartar, cinnamon, chopped slivered almonds).
3) Add in wet ingredients (egg, melted butter, vanilla, oatmeal cookie extract). Stir well.
4) Roll dough into slightly flattened balls and place on cookie sheet.
5) Bake until golden brown (this will depend on the size of your cookie, but with 15 cookies mine took about 22 minutes).
6) Remove from oven and let cookies cool. They will solidify a lot as they cool. (If you try to eat one right away, you'll barely be able to pick it up).
7) Enjoy!
