Michael Symon’s Mabel’s BBQ To Add After-Hours Food Truck

Late-night Cleveland-style barbecue from the celebrity chef

In an inspired move that builds on the late-night atmosphere being cultivated by the resort, celebrity chef Michael Symon’s Mabel’s BBQ wants to keep on serving at the Palms, even after the main kitchen has closed.

Plywood is up and work has begun constructing the restaurant, a sequel to Symon’s hit Cleveland concept. It will take over the Addison Exhibit Hall space, next to the Race & Sports Book on the north side of the casino floor.

An expansive shaded patio beer garden facing Flamingo Road is also in the works and sitting in the northwest corner. Plans include the installation of a semi-permanent food truck serving a portion of the barbecue menu after hours.

When not in use at the Palms, the fully-functional truck can simply drive-off the lot and travel around the region, bringing the menu to local events and other Station Casinos.

Answering eager fans via social media, Symon will only commit to the space debuting by “end of the year,” a large project originally allocated a weighty $5,883,597 in estimated construction costs.

On the original menu, a voluminous stock of whiskeys and bourbons, meat smoked “over local fruitwood,” dishes served with “Cleveland pickles, Cleveland kraut and rye bread” and the secret ingredient of blending “Bertman’s Ballpark Mustard into the barbecue sauce.”
