Abstract

PURPOSE:To produce a large amount of galactooligosaccharide by simple operation in high yield, by treating lactic acid with beta-galactosidase derived from Bacillus circulans in a specific concentration. CONSTITUTION:Lactic acid is treated with beta-galactosidase having >=30wt.%, preferably 40-80wt.% substrate concentration derived from Bacillus circulans at pH 6-7 at 40-70 deg.C to produce a large amount of desired galactooligosaccharide at the high substrate concentration by using a small amount of the enzyme for a short time.
