Abstract
PURPOSE:To obtain the titled snack-like dough having light texture, by feeding a raw material consisting of rice or rice flour to a twin-screw type extruder, pulverizing the raw material, blending the pulverized raw material with water, then heating the obtained blend into the form of a rice cake under pressure, cooling the resultant rice caky material and extruding the cooled material in an unexpanded state. CONSTITUTION:A raw material consisting of rice or rice flour, such as nonglutinous rice, is fed from a raw material feeder 21 into a twin-screw type extruder 11, as necessary, pulverized in a pulverizing section 13 of the extruder 11 and then mixed with water fed from a water feeder 22 in a mixing section 14. The resultant mixture is subsequently heated into the form of a rice cake with reverse screws or cut screws in a cooking section 15 under pressure so as to provide a lower molecular weight of starch than that in an ordinary rice confectionery dough. The obtained rice caky material is then cooled in a cooling section 16 and subsequently extruded in an unexpanded state from a die 23 to afford the aimed rice confectionery dough.
