PROCESS:Quercetin is dissolved in a solvent, e.g., dioxane, to which a chloride of a fatty acid is added in the presence of pyridine to give a compound shown by the formula. Butyric acid, caproic acid, caprylic acid, palmitic acid, etc. may be cited as the fatty acid.
