Claims (1)
- 【特許請求の範囲】 1.天然のオート麦の味と香りを有する均一で安定な穀類の懸濁液において、 それは出発原料からの完全なβ−グルカンを含有し、以下の工程によって調製さ れることを特徴とする前記懸濁液であって、前記の工程が、 A)ロールドオート又は他の熱及び水処理されたオート麦をミールに、乾燥又は 湿潤粉砕する工程、 B)ミールが乾燥粉砕によって製造された場合は、オートミールを水に懸濁させ る工程、 C)粗繊維粒子を除去するために、懸濁液を任意に遠心分離又はデカントする工 程、 D)本質的にマルトース単位を生じさせ、グルカン消化酵素及びプロテイナーゼ 効果を有しないβ−アミラーゼで、懸濁液を、10〜100s-1の剪断速度範囲 で粘度3〜0.1Pasまで処理する工程、 E)本質的にマルトース単位を生じさせ、グルカン消化酵素及びプロテイナーゼ 効果を有しないα−アミラーゼで、懸濁液を、10〜100s-1の剪断速度範囲 で粘度0.5Pas未満まで処理する工程、 F)好ましくは、酵素で処理された懸濁液を均質化する工程、及び、 G)添加された酵素を不活性化する間、滅菌製品を得るために、UHT処理(U HT=超高温)に懸濁液をかける工程である前記懸濁液。 2.出発原料からの完全なβ−グルカンを含有し、天然のオート麦の味と香り を有する、均一で安定な穀類の懸濁液の調製方法において、 A)ロールドオート又は他の熱及び水処理されたオート麦をミールに、乾燥又は 湿潤粉砕する工程、 B)ミールが乾燥粉砕によって製造された場合は、オートミールを水に懸濁させ る工程、 C)粗繊維粒子を除去するために、懸濁液を任意に遠心分離又はデカントする工 程、 D)本質的にマルトース単位を生じさせ、グルカン消化酵素及びプロテイナーゼ 効果を有しないβ−アミラーゼで、懸濁液を、10〜100s-1の剪断速度範囲 で粘度3〜0.1Pasまで処理する工程、 E)本質的にマルトース単位を生じさせ、グルカン消化酵素及びプロテイナーゼ 効果を有しないα−アミラーゼで、懸濁液を、10〜100s-1の剪断速度範囲 で粘度0.5Pas未満まで処理する工程、 F)好ましくは、酵素で処理された懸濁液を均質化する工程、及び、 G)添加された酵素を不活性化する間、滅菌製品を得るために、UHT処理(U HT=超高温)に懸濁液をかける工程 を特徴とする前記調製方法。 3.工程A)の湿潤粉砕の際及び工程B)の懸濁の際に、脱イオン水を使用す ることを特徴とする、請求項2記載の方法。 4.工程B)において、オートミールを乾燥固形分含量が10〜15%になる まで懸濁することを特徴とする、請求項2又は3記載の方法。 5.工程A)の湿潤粉砕の際及び工程B)の懸濁の際に、50〜53℃の温度 の水を使用することを特徴とする、請求項2〜4の1又はそれ以上に記載の方法 。 6.工程D)のβ−アミラーゼとして、1,4−α−D−グルカン マルトハ イドロラーゼを使用することを特徴とする、請求項2〜5の1又はそれ以上に記 載の方法。 7.無菌状態で均一で安定な穀類製品を梱包することを特徴とする、請求項2 〜6の1又はそれ以上に記載の方法。
