Claims (9)
- 紙層又は板紙層と、外側の液体を通さないプラスチックコート層と、を備えた包装積層体から成る包装容器(10)に充填された食品の保存性を高めるための熱処理方法であって、
食品充填済みの前記包装容器(10)を液体加熱媒体にさらして、前記食品を所定の処理温度まで加熱し、所定時間、該食品を前記所定処理温度に保持し、
前記所定時間の経過後に、前記包装容器(10)を液体冷却媒体にさらして、前記熱処理済み食品を冷却する方法において、
前記食品充填済み包装容器(10)を、前記液体加熱媒体と接触させる前に、前記疎水性含浸剤を含む液浴(12)に浸漬、又は前記疎水性含浸剤を含む液浴(12)に浸す、又は前記疎水性含浸剤を含む液浴(12)を通過させ、前記包装容器(10)の外側に表出した切れ目縁部に、疎水性含浸剤を吸収及び含浸させることを特徴とする方法。 - 前記液浴(12)内の工程全体にわたって、前記包装容器(10)を前記液浴(12)中に完全に沈めたままとすることを特徴とする請求項1に記載の方法。
- 前記液浴(12)の温度を、周囲温度よりも高い温度に保持することを特徴とする請求項1又は2に記載の方法。
- 前記液浴の温度を、60℃〜90℃に保持することを特徴とする請求項1〜3のいずれか一項に記載の方法。
- 前記液浴中における前記疎水性含浸剤の濃度を、液体の重量比で1%〜5%とすることを特徴とする請求項1〜4のいずれか一項に記載の方法。
- 前記疎水性含浸剤は、界面活性剤よりなることを特徴とする請求項1〜5のいずれか一項に記載の方法。
- 前記界面活性剤は、脂肪酸尾部に16個〜22個の炭素原子を有するアルキルケテンダイマーであることを特徴とする請求項6に記載の方法。
- 前記熱処理を、処理温度80℃〜140℃のレトルト処理により、バッチ式または連続式に行うことを特徴とする請求項1〜7のいずれか一項に記載の方法。
- 前記熱処理を、温度60℃〜90℃の低温殺菌により、連続的に行うことを特徴とする請求項1〜8のいずれか一項に記載の方法。
