Abstract
Description
タガトースが0超過〜20重量部、ラクトバチルス・カゼイが0超過〜1重量部である食品組成物が提供される。
タガトースを0超過〜20重量部;
ラクトバチルス・カゼイを0超過〜1重量部;
脱脂粉乳を0超過〜10重量部;及び
精製水を50ないし99重量部;
を含有する、発酵乳組成物が提供される。
タガトースを0超過〜20重量部、ラクトバチルス・ラムノサスを0超過〜1重量部を含有する、食品組成物が提供される。
タガトース0超過〜20重量部;
ラクトバチルス・ラムノサス0超過〜1重量部;
原乳50ないし99重量部;
ペクチン0超過〜1重量部;及び
精製水0超過〜50重量部;
を含有する、濃厚発酵乳組成物が提供される。
タガトース0超過〜20重量部;及び
ラクトバチルス属の乳酸菌0超過〜1重量部;
を含有する食品組成物が提供される。
タガトース0超過〜20重量部;
ラクトバチルス属の乳酸菌0超過〜1重量部;
原乳50ないし99重量部、より好ましくは70ないし90重量部;
ペクチン0超過〜1重量部、より好ましくは0超過〜0.5重量部;及び
精製水0超過〜50重量部、より好ましくは1ないし10重量部;
を含有する、濃厚発酵乳組成物が提供される。
タガトース0超過〜20重量部;
ラクトバチルス属の乳酸菌0超過〜1重量部;
脱脂粉乳0超過〜10重量部、より好ましくは3ないし5重量部;及び
精製水50ないし99重量部、より好ましくは80ないし95重量部;
を含有する発酵乳組成物が提供される。
タガトースの利用能力が優秀な乳酸菌を選別
公知の乳酸菌菌株(商業菌株250種、人分離菌株25種、及び市販されている乳加工品から分離した菌株110種)を対象として、タガトースの利用能力を評価した。
前記385種の乳酸菌菌株を選択培地に純粋培養(各菌株の菌数が108ないし109cfu/ml程度の停止期の培養液1%)により接種し、37℃のインキュベーターで18時間培養し、3次継代して、活力が最適点である状態で実験を行った。
前記各乳酸菌菌株のタガトース利用能力を評価するため、ペプトン5g、酢酸ナトリウム三水化物2.5g、硫酸マグネシウム七水化物0.5ml、硫酸マンガン四水化物0.5ml、ツイン 80 5ml、クエン酸ニアンモニウム(diammonium citrate)1g、リン酸ニカルシウム(dipotassium phosphate)1g、及び蒸留水480mlからなる最小培地を用いた。
前記製造された培地に前記培養した各乳酸菌菌株を1%接種し37℃のインキュベーターで24時間培養した。その後、ELISAリーダーを用いて各々の吸光度を測定し、希釈液を利用した平板培養により菌数を測定する方式でタガトースの利用能力を評価した。
実施例1の結果により優秀な菌株を同定
上記実施例1で培養された各乳酸菌菌株の中で、タガトース利用能力の優れた19種を選別し、これらの16s rDNAを分離・同定した。
実施例2で同定された乳酸菌菌株の一部において、他のプリバイオティクスの利用能力
上記実施例2で同定された菌株19種の中、タガトース利用能力がとりわけ優れている9種の菌株を利用し、タガトース以外の他のプリバイオティクスに対する利用能力を評価し、比較分析した。
タガトース及びラクトバチルス・ラムノサス乳酸菌を含有するシンバイオティック濃厚発酵乳組成物の製造
プリバイオティクスとしてタガトースを含有し、プロバイオティクスとしてラクトバチルス・ラムノサスGG菌株を含有するシンバイオティック濃厚発酵乳(糊状発酵乳、液状発酵乳など)食品組成物を製造するため、下記のような方法により下表2の組成の濃厚発酵乳を製造した。
タガトース及びラクトバチルス・カゼイ乳酸菌を含有するシンバイオティック発酵乳組成物の製造
プリバイオティクスとしてタガトースを含有し、プロバイオティクスとしてラクトバチルス・カゼイ−01(R)菌株を含有するシンバイオティック発酵乳(液状発酵乳など)の食品組成物を製造するため、下記の方法により下表5の組成で濃厚発酵乳を製造した。
タガトースを0超過〜20重量部;
ラクトバチルス・カゼイを0超過〜1重量部;
脱脂粉乳を0超過〜10重量部;及び
精製水を50ないし99重量部;
を含有する、食品組成物が提供される。
タガトース0超過〜20重量部;
ラクトバチルス・ラムノサス0超過〜1重量部;
原乳50ないし99重量部;
ペクチン0超過〜1重量部;及び
精製水0超過〜50重量部;
を含有する、食品組成物が提供される。
Claims (8)
- タガトース及びラクトバチルス・カゼイ(Lactobacillus casei)を含有する、食品組成物。
- 前記ラクトバチルス・カゼイは、ラクトバチルス・カゼイシロタ(Lactobacillus casei Shirota)、ラクトバチルス・カゼイDN114001及びラクトバチルス・カゼイ−01(R)からなる群より選ばれた少なくとも1種である、請求項1に記載の食品組成物。
- 前記組成物100重量部に対して、
タガトースを0超過〜20重量部、ラクトバチルス・カゼイを0超過〜1重量部で含有する、請求項1に記載の食品組成物。 - 全組成物100重量部に対して、
タガトース0を超過〜20重量部;
ラクトバチルス・カゼイを0超過〜1重量部;
脱脂粉乳を0超過〜10重量部;及び
精製水を50ないし99重量部;
で含有する、請求項1に記載の発酵乳組成物。 - タガトース及びラクトバチルス・ラムノサス(Lactobacillus rhamnosus)を含有する、食品組成物。
- 前記ラクトバチルス・ラムノサスは、ラクトバチルス・ラムノサスGGである、請求項5に記載の食品組成物。
- 前記組成物100重量部に対して、
タガトースを0超過〜20重量部、ラクトバチルス・ラムノサスを0超過〜1重量部で含有する、請求項5に記載の食品組成物。 - 全組成物100重量部に対して、
タガトースを0超過〜20重量部;
ラクトバチルス・ラムノサスを0超過〜1重量部;
原乳を50ないし99重量部;
ペクチンを0超過〜1重量部;及び
精製水を0超過〜50重量部;
で含有する、請求項5に記載の濃厚発酵乳組成物。
