Abstract

Enzymes are liberated from the cells of yeast and other fungi by impacting a liquid suspension of the yeast or other fungi against a surface, preferably a metal surface, by projecting the suspension under pressure towards the surface through a small orifice and regulating the extent of the liberation of the enzymes by varying the pressure at which the suspension is projected. The method is used in the preparation of invertase from yeast and diastase from fungi.ALSO:Enzymes are liberated from the cells of yeast and other fungi by imparting a liquid suspension of the yeast or other fungi against a surface, preferably a metal surface, by projecting the suspension under pressure towards the surface through a small orifice and regulating the extent of the liberation of the enzymes by varying the pressure at which the suspension is projected. The method may be used to produce homogenized yeast suspensions for use in the production of (a) invert sugar from cane sugar; (b) "high test," molasses from cane sugar syrups; (c) baker's yeast; (d) yeast extract, and (e) beer from immature beer by secondary fermentation of reduced duration. The method may also be used in the production of diastase from fungi.
