Abstract
A soup concentrate is prepared by cleaning and chopping the vegetables used, extracting juice from meat and mixing the juice with fat, cooking the vegetables in the mixture, e.g. at boiling temperature, adding seasoning, and concentrating by prolonged boiling at about 105 DEG C. The pasty mass obtained may be preserved in sealed tins, bottles, &c. and may be prepared for use by adding water and boiling for a short time, e.g. 2 minutes.
