Abstract
gamma -Pyrones, for example maltol which can be used as a perfumery agent, are obtained by a rearrangement reaction of epoxybeta -pyrones of formula II, in which R and R' have the meaning given in Claim 1, with an acid. It is possible to synthesise the compound of formula II by reaction of a compound of formula III (which can be obtained from furfural) with an acid anhydride having a pKa of </= 4, and subsequent epoxidation. <IMAGE>
