Abstract

N-Carbamoylpyridinium salts of the formula (I) <IMAGE> are obtained by reacting the corresponding N,N-disubstituted carbamoyl chlorides with the appropriately substituted pyridine N-oxides at a temperature of 0-50 DEG C preferably in aprotic solvents and, where appropriate, replacing the chloride anion which is produced in this reaction by another, so-called hard, anion. The resulting salts are stable for lengthy periods on exclusion of moisture and, in particular, at low temperature. The salts are suitable for crosslinking vegetable and animal protein and for modifying peptides.
