Abstract

1458625 Bread dough additives DISTILLERS CO (YEAST) Ltd 19 May 1975 [23 May 1974] 23027/74 Heading A2B [Also in Division C5] Propionic acid or a salt thereof is encapsulated in a substance which melts or dissolves during baking and is added to bread dough. The encapsulating material may be an edible fat melting at 100 to 180‹F e.g. glyceryl monostearate, paraffin wax, palm oil or beef dripping or a proteinaceous colloid e.g. gelatin. The salt may be calcium propionate monohydrate. The dough may contain 0.05 to 0.4% of the acid or salt and 0.5 to 3% of the encapsulating material, based on flour weight, there being 2 to 10 times more encapsulating material than acid or salt. The encapsulated particles may be less than 1 mm. in diameter and may be in the form of a flavourable powder.
