Abstract
Procedimiento para reducir el olor a pescado en productos alimenticios envasados, que contienen un ingrediente de pescado, caracterizado porque comprende las etapas de a) incorporar un agente reductor no tóxico con otros ingredientes que incluyen pescado, para producir un producto alimenticio, de b) sellara el producto en un recipiente y de c) someter el producto en un recipiente y de c) someter el producto a esterilización térmica dentro del recipiente sellado, realizándose la esterilización a una temperatura de 80 a 200ºC, preferentemente de 110a 140ºC, y durante un tiempo de algunos segundos a 20 horas, preferentemente de algunos segundos a 5 horas, utilizándose los tiempos más cortos con las temperaturas más altas.
