Abstract
Description
The invention relates to a new method for cleaning dishes in the known multi-stage washing systems. These dishwashers contain at least one pre-wash stage ("pre-clearing zone"), a main wash stage and a final rinse stage.
The rinse water is circulated in the individual rinse stages by means of pumps. Fresh water mixed with rinse aid is used in the rinse aid stage. The fresh water, which is reduced by the carry-away losses of the dishes, passes through the washing system in countercurrent to the transportation of the dishes. It is collected under the pre-rinse stage and freed of contaminants that influence the discharge conditions mechanically (light liquid separator with sludge trap) or physico-chemically (emulsion splitting system).
The wastewater treatment system is usually installed far away from the flushing system and is therefore often neglected. If the disposal intervals are much too long, the waste that is then disposed of can only be disposed of as special waste because it has decomposed into non-recyclable substances through acidic fermentation.
The task of shortening the disposal intervals is achieved in another known dishwasher system (CH-A-262228) in that the wastewater obtained in the pre-rinse stage is mechanically cleaned in an integrated cleaning system designed as a filter and then fed back to the pre-rinse stage as rinse water . The arrangement of the rinsing water cleaning system in the dishwasher opens up the possibility of disposing of the separated wastewater ingredients in a fresh and thus recyclable state at short intervals.
The mechanical cleaning system designed as a filter cannot be handled in a practical manner. The filters clog quickly and therefore have to be removed very frequently for cleaning. This cleaning is unsanitary and is therefore often neglected or postponed for an unacceptably long time. In addition, liquid edible fats and oils are not retained by the filter and enter the sewage system with the filtrate.
The object of avoiding these disadvantages and malfunctions of this known cleaning system is, based on a mechanical wastewater treatment stage integrated in the dishwasher, achieved according to the invention in that the mechanical wastewater treatment stage is designed as a gravity separation stage. Separators of this type are known as cleaning devices for waste water contaminated with light substances. However, their use as an integrated cleaning stage for the waste water occurring in the pre-rinsing stage of a dishwasher, which may contain sinking and floating substances, is not known. The use of such an integrated cleaning stage has the advantages that all of the ingredients contained in the waste water are now retained and there is a hygienic removal option. Since the separation stage is located inside the dishwasher, the ingredients (which are considered to be valuable) are disposed of regularly. The collected ingredients can now be brought fresh for reprocessing.
A gravity separator that works without air access is preferably used. If, according to the invention, the ingredients separated off there are transferred to collection containers which also do not contain any air volume, the ingredients can be brought to recycling in the fresh state.
As far as the gravitational separation of the ingredients of the purified water is concerned, it is perfectly suitable to be reused in the pre-rinse stage as rinsing water. This has the advantage over the previous practice of using waste water from the main rinse stage that the contaminants from the main rinse stage have already been eliminated and no longer burden the pre-rinse stage. If, according to the invention, the wastewater is also chemically cleaned, e.g. B. the ingredients present in emulsified form are separated, then this purified water can be reused in the rinse zone and can thus be recycled. This drastically reduces fresh water consumption. The wastewater cleaned in this way also fulfills the discharge conditions and can be discharged into the sewage system.
- Wastewater from the pre-rinse stage is collected separately, cleaned and recycled into this stage after cleaning.
- Wastewater from the main and final rinse stages are also collected separately, but, since they are only slightly contaminated, can be discharged into the sewage system in excess.
In the pre-rinse stage, the solid contaminants are usually retained by a coarse sieve. This sieve must be cleaned at regular intervals. To mechanize this process, it is proposed according to the invention that the screened solid contaminants in a s. G. To shred wet shredder and to transport it to press dewatering with the unpurified wastewater taken from the pre-rinse stage.
The press water from press dewatering is cleaned in the plant's own cleaning system and then recycled to the pre-rinse stage. The wet shredder can even be used for solid contaminants that occur in other areas of the kitchen or canteen, which are thus also fed into a controlled recycling process. The press-dewatered contaminants are stacked in the collection container until they are disposed of.
Waste water with separable contents occurring at other points can also be treated in the separator system of the dishwasher and the cleaned waste water can also be used in the dishwasher system. This results in a second use of these waters.
The collecting container can finally used cooking oils and fats, such as. B. fryer fat, are supplied so that their disposal and return is secured for recycling.
