Chicken Cutlet Parmesan

In our house, Sundays are all about Italian food. My husband spends hours (not exaggerating) in the kitchen cooking some amazing, classic italian dishes! Eggplant parmesan, meatballs, sauce, bread... and my all time favorite- chicken cutlet parmesan! I LOVE it and could eat it all day....erry day.
Today I decided to keep it as clean as possible. I was hoping for Paleo but that will take some more time to figure out. This is seriously the easiest recipe ever.
*We make so much sauce, we use it all week. In the recipe below Im adding a shortened version of our family recipe (cant give any secrets away!)



Chicken Cutlet Parmesan
2 Servings

4 Chicken breast fillets- defrosted
1C Almond flour
2 C Sauce (homemade or store bought)
Grated Parmesan

Sauce
1Tomato sauce (no high fructose corn syrup)
2Tomato paste (no HFCS)
1C water
1 clove garlic chopped
Basil and oregano to cover
Extra virgin olive oil

Sauce: Sauté Garlic in oil until soft. Add tomato cans and water. Add seasoning to cover sauce. Stir and simmer for 10 min.

Preheat oven to 350.
Coat chicken in almond flour
Bake 15 minutes, flipping halfway through.
Cover with sauce
Sprinkle with a bit of Parm.
Bake for 10 minutes.
Enjoy!

12 Weeks to a better ME!

I've been planning on a challenge to do among friends for quite a while and it is not finally going to happen! Group made, sign ups done and now we are ready to rock it!
I feel that being held accountable is something I need! I love checking in, motivating and being motivated by others. I know that even if Im having a bad day and want to eat any sweet I can get my hand on, there will be a friend to talk me down and help me get my brain back on track! 
I look forward to seeing what I can accomplish in the next 12 weeks!

PPP Paleo

I am finding that going Paleo has been quite easy. I dont miss my oats (they were a pain to make) or my Rice (again I hated making it). I do miss my condiments...soy sauce! Its been 3 days and I don't feel like too much has changed in my eating and I feel great! The fact that I don't have to look at ingredients is nice! I just eat REAL FOOD...crazy concept huh? the last couple days have looked a bit like this:
M1: Omelet with spinach and tomato
M2: Nuts
M3: Salad and veg with oil, vinegar and mustard dressing
M4: Seaweed
M5: Chicken in mustard dressing marinade with veggies...so good!

Pile on the Miles 2012


For the past 3 years Monica from Run, Eat, Repeat has hosted Pile on the Miles. Runners from all over have taken part in this challenge every year and this year Ill be joining them! This is just another step  towards completing my first half marathon and marking off an item on my bucket list! This isnt about who's running more or who is faster, its more about challenging yourself to go farther than you have in previous months! So from Nov.1 to Dec.1 Ill be aiming for my goal and hopefully passing my 60 miles that I've set for myself. Heres more info on what its all about!

Challenge

I've decided that it would be fun to take part in a clean eating / Paleo challenge. I've been eating clean for the last year now and I love that I'm actually one of those people that can say its a lifestyle. It just comes naturally and I don't really put much thought into it anymore!

Going Paleo...that's a whole new world for me. I would need to eliminate my grains: brown rice and oats ( I eat both daily), Dairy: yogurt(I don't eat often) and cottage cheese. I'm still looking into it and learning the spa and fonts but I think to just try it would be good. I love doing this so I can speak to an experience and have my own opinion and understanding. It starts Monday so hopefully by then I'll have everything in order!

In the group of girls doing this challenge I will be checking in daily with workouts, eating and how things are going. Along with being held accountable It'll be nice to see what everyone else is up to and how they are doing! I look forward to swapping recipes and tips!

A year from now..

Now that I'm so close to being able to fully work out (2 weeks to go!) I've been thinking about where I want to be and what I want to be doing in the next year. Only 2 1/2 months until 2013 and I want to go into the new year ahead of the game! No resolutions or promises to be broken!

6 Months from now:
I want to have shed at least the rest of my baby weight- 20 pounds.
I want to have the endurance to finish a 5k in under 30 minutes. 
No longer fit in my current wardrobe...because Im so in shape!
Wear a pair of shorts! 

1 year from now:
I want to be Sweating Pink in a 1/2 marathon or two.
Push my body farther than I have in the past and surpass my PR from last 2011.
Complete 10 baby wearing hikes on Guam.
Get dive certified with my husband.
Run on a pair of shorts and a sports bra!...its been about 7 years since I've done this.
Inspire at least one person. 

After growing a human for almost 10 months I know I have my work cut out for me! If I start now I wont regret it. Its going to take time to get my body where I want it andI cant wait to share my journey!

Monday Mommy Transformation!


Hello Monday! Today we are sharing our first Monday mommy Transformation story! This is Shannon and she has been such an inspiration for me and many others! With her help I was able to gain the knowledge to change up my workouts and see results! She is amazing! You can read her story below!
What was your life like before you started your health and fitness journey?

I was super lazy, very negative towards people, and never wanted to be around anybody.

What motivated you to make a change?
My husband and my son motivated me to make a change in my life. I didn't want to bring my son up in a life that was unhealthy and always negative. With me being overweight, it really put a strain on my marriage.

How do you involve your family in your journey?
We cooked and worked out together.

What is your biggest accomplishment so far?
My biggest accomplishments so far has been regaining my life back and my energy back. By regaining my life back, my husband and I have a brand new relationship and do a lot more things together.

Who inspires you?
There are many people on a daily basis that inspire me. I keep going so I can keep inspiring people like that.

When your in a slump what do you do to shake it?
When I am in a slump, I go to the gym or start looking through my pictures of my transformation and it kicks me back into gear.

How did you do it?
I achieved my goals by following the Jamie Eason 12 week program and eating clean daily. I recently finished James Wilsons 12 week program.

What is one of your favorite recipes?
It is hard to choose one favorite recipe. I recently got a membership to Dashingdish.com and LOVE many of her recipes! They definitely do not taste healthy but they are!

A little Tri



I have always said I wanted to train for a triathlon, not actually do one, just TRAIN for one! Participating in one just seemed like too big of a goal. So when did I start training you ask? NEVER. But it was still a goal of mine that I would probably never complete. 
That was until I heard about the sprint or “mini tris” that a bunch of other Navy wives were doing. I though “I could do this!” It was a 400m swim, 6 mile bike ride, and 1.5 mile run. It seriously could not get any easier! I think I’m a pretty decent swimmer...biking is an breeze and the run...Id deal with that when it came! After being on a trainer that called for “no cardio” I was a bit behind on that part. 
When I finally talked myself into showing up for one it was one of the most nerve wracking mornings of my life. I was SOOO nervous! I figured Id be last, do the worst and go so slow I wouldn’t be able to show my face at the next one. Boy was I wrong!
Since I only knew 2 other people it was really a race against myself. This made it less stressful. I figured what the hell...I don’t know any of them so if I suck they probably won't even notice! 
The entire time I was doing the tri I stayed pretty much in the middle of the group which gave me people to keep up with (ones in front) and people to push me (ones in the back). Did that make sense?  
Everyone was so supportive and cheered each other on. I was so glad it was laid back and fun! It was hotter than hell and I was not properly hydrated (I should have started the week prior!) but it was so worth it...the tan didnt hurt either!
Here are a few shots from the first 2 I did. They are so fun and I recommend them to anyone and everyone of any skill level! It would definitely be something fun to start in your community with other moms/wives you know. Nothing serious...just have fun and get fit!

1000 Squats

Today I'm starting a new challenge! Along with my June daily challenge I am taking on the I See Fit People 1000 squat challenge! ONE THOUSAND SQUATS in 1 week. Hopefully Ill finish before the weekend with 200 a day. I completed 100 this morning with ease so its shouldnt be too difficult! Who knows maybe Ill just keep doing 1000 a week every week- I get back to you on that!


AM/PM: Squat count
3 x 10: Full body squat with medicine ball
3 x 10: Medicine ball squat and throw
4 x 10: Air squat
