Update Vite to latest #1597

Changes

Updates our (temporarily-forked) copy of Vite to get in some fixes. Primarily, this removes a bunch of dev hacks we were doing!

Scripts proxy correctly in dev! 🎉

(just the 200 and the fact that code appears on the right means it’s working)

Testing

Tests should pass. Currently we don’t have too many dev server tests (orchestrating the ports has proved tricky), but the build tests are unaffected which is a good sign.

It does. It basically keeps our ESM SSR forked code, and just updates all the latest PRs that have landed in Vite (including our fixes over there)
