These articles have effectively been replaced by other articles in the `payments/` section. I should have removed them in an earlier commit.

This aims to fix typos and make some paragraphs more clear. While there are a lot of commits, these are overwhelmingly trivial changes.
It also renames “Overview” articles to be consistent for each section. This is in anticipation of a documentation site with proper navigation links.
