Rename unit-test-coverage.yml

Describe the bug
unit-test-coverage.yml has the same workflow name as build-deploy-doc.yml. They are both named Build Document, despite unit-test-coverage.yml being used for unit tests rather than building documents.

Expected behavior
The name set in unit-test-coverage.yml should be changed to "Unit Test and Coverage".
