Change configuration of tests in GitHub Actions: use the latest x86 macos runner with the `oldest` dependencies and Python 3.8. Use the latest macos runner (arm64) only against the `latest` and `optional` requirements.

This PR is fixing the issue regarding macos tests failing on CI, but there's an issue here regarding Codecov token. Apparently because I opened this PR from a branch in my fork. Will troubleshoot that issue later, so now I'm closing this PR and opening a new one from a branch in this repo. |
