chore: license metadata adjustments

I've made a couple adjustments within to adjust the legal entity name our corporate name and to also introduce the SPDX identifiers via the license attribute to enable license automation tooling.

I think we should also consider putting the LICENSE-* files in the root of the crates, to ensure that they are published with the Crate when we eventually publish it. Thoughts?

I need to double check on this, but I think if license files are in the root of a workspace, they automatically get added to all the child crates. If that is not the case, more than happy to physically add them.
