What is the purpose of the change

The configuration table.exec.simplify-operator-name-enabled is wrongly documented as table.optimizer.simplify-operator-name-enabled in the Overview page.

[hotfix][table] Rename operator name option

Note: Thetable.optimizer.simplify-operator-name-enabled was renamed to table.exec.simplify-operator-name-enabled and moved from OptimizerConfigOptions to ExecutionConfigOptions in this commit: 16ed0f4
