Spiced Feijoa & Banana Cake

Ingredients
5-6 feijoas, peeled & sliced
3-4 ripe bananas, mashed
100g butter, softened
½ cup sugar
2 eggs
1 teaspoon Baking Soda
2 tablespoons hot milk
2 cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ground ginger
Method
Preheat the oven to 180ºC fan bake. Line the inside of a round cake tin with baking paper
Arrange feijoas on the bottom of cake tin
Cream the butter and sugar until light and fluffy, then add the eggs one at a time. Add the mashed banana and mix well
Stir the baking soda into the hot milk and add to mixture, then sift dry ingredients together and fold through mixture
Scoop the mixture into the prepared tin, level the top, and bake for about 50 minutes or until cake springs back when lightly touched
Leave in tin to cool before turning out and serve with plain yoghurt (optional).
