I have used various ball valves at work for fluids and sometimes for gases. I didn't know if these would work well in a low-pressure shutoff application, but they do. Stainless steel is bit of an overkill, but should keep my air mattress inflated at constant pressure for a long time. If you don't need constant adjustment (and who does?) you can just close the valves and turn off the compressor/controller.

Threads
