Abstract

PURPOSE: To obtain a cheese having any given shape or a pattern, e.g., floral pattern, by melting cheese under heating, extruding the plasticized cheese from a nozzle with a die or squeezing it out so that it is molded.
CONSTITUTION: Cheese is blended with a mixture of a plastically adjusting substance, pH adjusting substance, seasoning substance, coloring matter, etc. or not blended with it, melted under heating at about 50W130°C, preferably 50W95°C, the cheese is kneaded and made to flow so that it has such a plasticity as to be molded at 20W80°C. The plasticized cheese 1 is extruded by the extruder 4 with the die 2A having a hole of a pattern, e.g., floral pattern to the shape of the pattern, and the cheese is cut by the wire cutter 3A to give the desired cheese 1A.
