Abstract
A new hybrid baker's yeast, Saccharomyces cerevisiae GB 2335 (ATCC 13601), whose characteristics are described, is stated to be less sensitive to variations in the temperature and pH value of the propagating medium than are yeasts of similar initial activity and keeping quality hitherto available and therefore is particularly suitable for use in continuous propagation processes.
