SE HACE REACCIONAR UNA SOLUCION QUE CONTIENE GLUCOSA EN PRESENCIA DE UN CATALIZADOR CON ACTIVIDAD, DE GLUCOSAISOMERASA, PREPARADO O BASE DE UN SOPORTE DE SIO<2. DICHA SOLUCION CONTENIENDO GLUCOSA, ANTES DE LA REACCION, SE PONE EN CONTACTO CON CUERPOS MOLDEADOS A BASE DE SIO<2 O ALUMINOSILICATO; LA PROPORCION EN MASA DE CATALIZADOR A CUERPOS MOLDEADOS ESTA COMPRENDIDA ENTRE 3:1 Y 1:3 Y PREFERENTEMENTE 1:1. LA VELOCIDAD ESPACIAL CON QUE SE HACE FUNCIONAR EL CATALIZADOR, SE AJUSTA DE MANERA QUE LA SOLUCION SALIENTE TENGA UN CONTENIDO DE FRUCTOSA DE APROXIMADAMENTE 42% EN PESO, REFERIDO A SUBSTANCIA SECA.
