Abstract
"PIGMENTO VERMELHO NATURAL E PRODUTO ALIMENTìCIO E MATERIAL ALIMENTìCIO CONTENDO O PIGMENTO". Os presentes inventores descobriram que é possível obter um pigmento natural vermelho a partir de hemoglobina e mioglobina, cuja porção metaloporfirina é protoporfirina de zinco e fabricaram produtos de carne, produtos de carne de baleia, produtos de carne de peixe e produtos de pasta de peixe coloridos através do pigmento natural vermelho. Conseq³entemente, foi possível a obtenção de produtos alimentícios estáveis à oxidação, possuindo uma ótima tonalidade de cor sem a necessidade do uso de um fixador de cor como, por exemplo, nitrito.
