Shifting the index locus from Start to Center is the correct thing to do for plotting and conversion to Netcdf.

But it's risky. If any point is oudside of eg: -180:180, depending on the projection, the sign is flipped by GDAL. This breaks the range for plotting and breaks netcdf save. We need a robust way of dealing with this it seemingly shouldn't occur anyway.
