[Schema] Version object

Very similar to Modrinth, I'd like to move fields like game_version, version, and download to a dedicated Version object stored in a versions array field. This isn't really feasible unless/until asset uploading is supported because many mod authors just replace their download URL as they update their project to save on storage space, hence its exclusion from this initial draft.
