I don't know if you are aware of this but there is a eZPublish Template bundle for TextMate: https://github.com/omh/eZ-Publish-TextMate-Bundle . It works well with sublime, but it's far from perfect. I can see that you are starting from scratch here so maybe there are some parts of this older project that you can adopt.

I really look forward to have a good template highlighting. Keep up the good work!

Also wanted to make you aware of my own eZ Publish package for Sublime Text 2 which was based upon (you've guessed it) Ole Mortens TextMate bundle. I just put it up on Github @ https://github.com/nmeirik/nmezsublime

Hey, Thanks for the info nmeirik, yours looks really complete. So far mine mostly covers template highlighting, I haven't had much time to do much else yet. I will probably test yours out in the very near future. I will let you know what I think.
