Interpolation/Prediction with independent variable

Assume we have something like temperature as our dependant variable (variable we wish to interpolate) but some other input at the desired grid scale (e.g. Ground cover type, altitude or even some other variable like wind speed). Is it possible to incorporate these independent variables into the interpolation? Thanks!
