Description of the desired feature

Verde has utilities for selecting scattered spatial data based on windows and blocks (block_split and the new rolling_window). We don't really have any examples or tutorials explaining how this works. It would be nice to have a new "Selecting data" tutorial showing uses of these functions. It should include the basics of how the selection works and then some use cases. For example, use rolling windows to fit planes to data and make a slope map.

Are you willing to help implement and maintain this feature? Yes but if anyone wants to give it a shot, that would be great 🙂
