I think a rotatable/spinnable "knob" to select the HP delta might be nicer than having to increment/decrement one point at a time, or manually inputting via keyboard.

Possibly very slick might be dragging the HP item in the top bar and "spinning" that to even more quickly update HP, as a shortcut to this UI. The idea would be to intercept the drag on that component and show the "spinner" underneath, likely with a button to confirm the change
