Feature parity for AzureConverter v1.9 in v2.0 + Overall Table Extraction Options

We have a lot of customers/prospects struggling with Tables inside of PDFs. We used to pipe them via Azure API and convert files so that we get a set of Text and Table documents. Unfortunately, there is no full equivalent in Haystack v2 yet.

Describe the solution you'd like
I would love to have a Haystack component that allows me to turn PDFs incl. tables into readable formats that are easy to understand for generative or extractive models. This component / solution may or may not involve other 3rd party services.

Describe alternatives you've considered
Manually go through the files and try to transform every table individually.
