Membership: Lots of people don't have a gender set

Lots of people don't have a gender set, which we probably need to address at some point when we get to signup stuff. I think people would appreciate having it filled out for helping with rooming information sometime down the line. To be inclusive/future-proof, though I don't know that we need it now, might be prudent to create a non-binary option in case we ever needed it, since it seems like once a gender is selected, you can't switch it back to "null".

• Still very uncomfortable having all those birthdates available and easily exported. This is PII. Got around it for now by having excel calculate an "age at 1/1/2018" to include as part of the document I will email. I am also deleting the ages for anyone above 21.
