Allow admins to parameter the default value of certain fields

Context

While testing, I realized that by a client demand, the field Règle via of the donation creation form has it default value to Chèque, and not Espèces which is the first option of the dropdown.
It is probably for usage comfort, and so it could be a nice thing to allow admins to change the default value of some of the fields to give a more comfortable usage for the people using the application.

• List the fields that need to be parametrized
• Make the field so they can have their default value changed
